Recipes/Batchelor's Veggie Fry

This is fast, easy, cheap, healthy, tasty, and leftovers reheat easily. Serves 2-4. Leftovers keep easily for the next day's lunch.

  • Onions - about 8-16 oz or a cup or two
  • Mixed veggies - 2 pounds
  • Olive oil - about 1/8 cup
  • Italian seasoning - about 1 tbsp
  • Rice - 4 cups prepared

Fry everything except rice on high until onions seem tasty (about 10 minutes). The rice may be fried with the veggies or served separately. More oil may be necessary if the rice is fried.

Use chopped frozen onions, frozen veggies, and instant rice for fast preparation.
